Tagliatelle with Salmon

This pasta is summer on your plate for me. With every bite I imagine myself on an Italian terrace with that cozy noise while you dine at 22:00. The nice thing about this dish is that it is really creamy but also nice and fresh. And easy to make so you don't have to sweat for hours in the kitchen. Perfect for a hot summer day!

In the pictures you can see that I used some chive flowers; they are now in the garden and are not only delicious but also very festive. If you don't have them, just leave them out. Or you can use some finely chopped chives. What you want

Ingredients

  • 300 gr fresh salmon

  • 1 onion

  • 1 clove garlic

  • 100 ml White wine

  • 1 el capers

  • 200 ml cooking cream

  • 100 gr creme fraiche

  • 1 lemon

  • 250 gr fresh tagliatelle

  • 4 gr parsley leaves (half a container from the supermarket)

  • 2 gr chives (a few sprigs, or more if you don't have any flowers)

  • 2 chive flowers

Preparation

  • Cut the salmon into cubes of about 1 cm.
  • Chop the onion, finely chop the garlic and fry it in a dash of olive oil.
  • Deglaze with the wine and let it reduce.
  • Finely chop the capers and add to the pan along with the salmon.
  • Pour in the cream and crème frache and allow to reduce gently.
  • When you are satisfied with the thickness, season the sauce with the zest of half a lemon, some pepper and salt.
  • Finely chop the parsley and chives. Carefully cut the flowers from the 'bulb'.
  • Meanwhile, cook the pasta according to package instructions, drain and add to the sauce.
  • Mix in the parsley and chives and serve.
  • I have now also sprinkled some herbal oil over it, but if you don't happen to still have it: let it sit.
  • Divide the chive flowers over the pasta.
  • Buon appetito!

Tip

  • In addition to this pasta, it is nice to serve a small salad. That can be very simple; i went for some sliced tomatoes, cucumber and a basic vinaigrette.
