Ingredients
6 white asparagus, cleaned and peeled
mace
2 Eggs
50 gr butter
Parsley
Nutmeg
Preparation
- Vacuum the cleaned asparagus with some mace and a knob of butter. Cook for 40 minutes at 88ºC.
- Boil the eggs for 10 minutes, then they are hard-boiled.
- Chop the eggs finely and mix with some chopped parsley, a pinch of nutmeg and some salt and pepper.
- Melt the butter in a pan and remove the white milk residue.

- Place the asparagus in the center of your plate.
- Divide the egg and parsley over this and finish the dish by adding the clarified butter.
