Asparagus with morel sauce and parmesan

I think the combination of green or purple asparagus with parmesan and morel sauce is fantastic. He comes here regularly. And especially now that the asparagus are in full season!

In these photos you see purple asparagus, which you cook in the oven so that they keep their color. If you're using green asparagus, you can cook them in lightly salted water for 4-5 minutes.

Do not be alarmed by the preparation time and waiting time; that pertains to the sauce. Make a lot of it and freeze it, then this dish will be ready much faster next time.

Ingredients

  • morel sauce

  • 4 large, about as thick purple asparagus

  • Grated Parmesan cheese

  • Slices of fresh truffle (optional)

  • Edible flowers (optional)

  • nasturtiums (optional)

Preparation

  • Preheat the oven to 220°C.
  • Cut the ends of the asparagus and peel them. To peel them as tight as in the pictures you can first cut them superficially all around and then peel them tight from that edge.
  • Place the asparagus in a baking dish and drizzle with some olive oil. Bake in the oven for 20 minutes.
  • Heat the morel sauce and spoon some in the middle of your plate. Place the asparagus on top and divide the cheese, truffle, flowers (I used thyme flowers) and nasturtium leaves on top.
  • Enjoy your meal!
