Dat mooie vlees wat een paar uur lang in de pan ligt, smaak krijgt en heerlijk mals wordt. En je huis vult zich met een heerlijke geur. Ik denk dat iedereen dit ultieme comfortfood kan waarderen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Als je met stoofvlees aan de slag gaat gebruik je meestal riblappen of sukade, in dit recept koos ik voor de laatste. En niet zomaar sukade; hertensukade. Want, zoals je inmiddels wel weet, ik werk samen met <a href=\"https:\/\/www.hetzeeuwsehert.nl\/\" target=\"_blank\" rel=\"noreferrer noopener\">Het Zeeuwse Hert<\/a> en ben steeds weer onder de indruk van de kwaliteit van het vlees. Dat is nu niet anders&#8230;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bij het vlees maakte ik een zijdezachte aardappelmousseline, gebakken paddenstoelen en wortels. Nu ik het recept maak, bedenk ik mij dat dit ook wel een mooi gerecht voor de feestdagen is. Mocht je de S.P.G. kruiden van Fyre Spices gebruiken, laat de knoflook dan achterwege.<\/li><li id=\"wpzoom-rcb-direction-step-1603295961046313\" class=\"direction-step\">Als de champignons en shiitake zacht zijn en een beetje bruin beginnen te kleuren mag het vlees weer terug in de pan.<\/li><li id=\"wpzoom-rcb-direction-step-1603295966276322\" class=\"direction-step\">Voeg de bloem toe en roer even door.<\/li><li id=\"wpzoom-rcb-direction-step-1603295971268331\" class=\"direction-step\">Schenk de rode wijn en de wildfond erbij. Waar nodig voeg je nog wat fond en\/of water toe; het vlees moet onder staan.<\/li><li id=\"wpzoom-rcb-direction-step-1603295975909340\" class=\"direction-step\">Breng zachtjes aan de kook en voeg de rode wijnazijn, laurierblad, jeneverbessen en kruidnagels toe. De zwarte peperkorrels plet je onder een bord, dan mogen die er ook bij.<\/li><li id=\"wpzoom-rcb-direction-step-1603295981458349\" class=\"direction-step\">Ris de tijm van de takjes en doe hetzelfde met de rozemarijn. De rozemarijn snijd je vervolgens nog fijn, die grote naalden zijn niet prettig om te eten. Voeg beiden toe aan de saus.<\/li><li id=\"wpzoom-rcb-direction-step-1603295990008358\" class=\"direction-step\">Zet het vuur laag en laat het vlees 3 uur lang met het deksel op de pan zachtjes sudderen; roer ieder half uur even om. (Met sudderen bedoel ik zachtjes koken\u2026)<\/li><li id=\"wpzoom-rcb-direction-step-1603295994558367\" class=\"direction-step\">Laat zonder deksel ongeveer een half uur verder inkoken en voeg de ontbijtkoek (in blokjes gesneden) toe. Als je veel vocht hebt kun je 2 stukken ontbijtkoek gebruiken, dan bindt het net wat sneller.<\/li><li id=\"wpzoom-rcb-direction-step-1603296004720376\" class=\"direction-step\">Zet opzij tot gebruik.<\/li><li id=\"wpzoom-rcb-direction-step-1603296013059389\" class=\"direction-step direction-step-group\"><strong class=\"direction-step-group-title\">Paddenstoelen<\/strong><\/li><li id=\"wpzoom-rcb-direction-step-1603296020206442\" class=\"direction-step\">Snij de eryngii in plakjes van ongeveer 1cm dik.<\/li><li id=\"wpzoom-rcb-direction-step-1603296025358451\" class=\"direction-step\">Steek de plakjes met een passende steker uit zodat je mooie rondjes krijgt.<\/li><li id=\"wpzoom-rcb-direction-step-1603296029955460\" class=\"direction-step\">Snij de rondjes voorzichtig kruislings in zodat je een raster krijgt.<\/li><li id=\"wpzoom-rcb-direction-step-1603296034254469\" class=\"direction-step\">Verhit wat olijfolie in een koekenpan en bak de rondjes goudbruin.<\/li><li id=\"wpzoom-rcb-direction-step-1603296038541478\" class=\"direction-step\">Schenk een scheutje sojasaus in de pan en bak de eryngii nog even door op de ingesneden kant zodat de sojasaus wordt opgenomen.<\/li><li id=\"wpzoom-rcb-direction-step-1603296042537487\" class=\"direction-step\">Leg opzij tot gebruik.<\/li><li id=\"wpzoom-rcb-direction-step-1603296046406496\" class=\"direction-step\">Snij het kontje van de steel van de oesterzwammen.<\/li><li id=\"wpzoom-rcb-direction-step-1603296064397629\" class=\"direction-step\">Bak de oesterzwammen in olijfolie goudbruin.<\/li><li id=\"wpzoom-rcb-direction-step-1603296071056638\" class=\"direction-step direction-step-group\"><strong class=\"direction-step-group-title\">Aardappelmousseline<\/strong><\/li><li id=\"wpzoom-rcb-direction-step-1603296077758719\" class=\"direction-step\">Schil de aardappels, snijd in gelijke stukken en kook gaar in (licht gezouten) water. Dit duurt 18-20 minuten.<\/li><li id=\"wpzoom-rcb-direction-step-1603296082894728\" class=\"direction-step\">Draai door een passe vide of pureer met een pureestamper.<\/li><li id=\"wpzoom-rcb-direction-step-1603296087304737\" class=\"direction-step\">Roer hier 50gr roomboter doorheen en schenk er stapsgewijs wat kookroom bij. Het doel is dat je voorbij de \u2018lijmfase\u2019 gaat en een zalvige puree krijgt.<\/li><li id=\"wpzoom-rcb-direction-step-1603296091954746\" class=\"direction-step\">Breng op smaak met nootmuskaat, versgemalen peper en zout.<\/li><li id=\"wpzoom-rcb-direction-step-1603296096388755\" class=\"direction-step\">Zet opzij tot gebruik.
